The best way to store carrots

Every year we store a fridge full of carrots, not because carrots are hard to find in the stores, but because the varieties of carrots we like are not available. Storing vegetables seems to be a thing of the past, but if you are particular about your carrots as I am, it is the only option. We grow only the Nantes varieties of carrots because they are coreless, tender and sweet. We have managed to store carrots through winter until June by harvesting late in the fall, washing the carrots immediately, removing any leaves and root hairs, and storing them in plastic bags in a 3-4 degree celcius fridge. The carrots require very little if any preparation before cooking. I never store carrots unwashed. Unwashed carrots are harder to clean the longer they are in storage and often they will rot. If you are as particular about your carrots as we are it’s worth the effort of preparing them properly for storage.
